Warm & Sweet Blackberry Cobbler is a classic dessert made with juicy blackberries baked under a golden, buttery biscuit topping. Served warm with a scoop of vanilla ice cream, it’s the perfect comforting treat for any season.
Ingredients
- 4 cups fresh or frozen blackberries
- 3/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 teaspoons cornstarch
- For the Topping:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 6 tablespoons cold unsalted butter, cubed
- 1/3 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine blackberries, sugar, lemon juice, vanilla, and cornstarch. Stir gently to coat the berries evenly.
- Pour the fruit mixture into a greased 9×9-inch baking dish and spread evenly.
- In another bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Stir in milk and vanilla until just combined to form a thick batter.
- Spoon the batter evenly over the blackberry mixture (it doesn’t need to cover completely — it will spread while baking).
- Bake for 35–40 minutes, or until the topping is golden brown and the fruit filling is bubbling.
- Let cool for 10 minutes before serving. Serve warm with whipped cream or vanilla ice cream.
Notes
- If using frozen blackberries, do not thaw before baking — increase bake time by 5 minutes.
- Add a pinch of cinnamon or nutmeg to the topping for a cozy twist.
- Store leftovers covered in the refrigerator for up to 3 days and reheat before serving.
