Description

A hearty twist on taco night featuring baked potatoes loaded with seasoned taco beef, cheese, and classic toppings for a filling and flavorful meal.


Ingredients

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade)
  • 2/3 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • Fresh cilantro, chopped (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes, rub with olive oil, and pierce with a fork. Bake for 50-60 minutes until tender.
  2. Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  3. Add taco seasoning and water to beef. Simmer for 5 minutes until thickened.
  4. Once potatoes are cooked, cut a slit down the center and fluff the insides with a fork.
  5. Fill each potato with taco beef and top with cheese, sour cream, salsa, lettuce, tomatoes, and green onions.
  6. Garnish with cilantro if desired and serve immediately.

Notes

  • For a lighter version, substitute ground turkey or chicken.
  • Microwave potatoes for a quicker option (10-12 minutes, turning halfway).
  • Customize toppings with jalapeños, guacamole, or black beans.
