Ingredients
- 1 lb elbow macaroni
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (1 oz) packet taco seasoning mix (or homemade)
- 1 (10 oz) can diced tomatoes with green chilies (Rotel-style)
- 2 cups milk
- 1 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 1/2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Salt and pepper to taste
- Fresh cilantro or green onions for garnish (optional)
Instructions
- Cook macaroni according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned, about 5 minutes. Drain excess fat if necessary.
- Add diced onion and garlic, cooking for 2–3 minutes until softened.
- Stir in taco seasoning and diced tomatoes with green chilies. Cook for 2–3 minutes, letting flavors meld. Remove from heat and set aside.
- In a separate large pot, melt butter over medium heat. Whisk in flour and cook for 1 minute to form a roux.
- Gradually whisk in milk and cream, stirring constantly until the mixture thickens, about 3–5 minutes.
- Reduce heat to low and stir in shredded cheddar and Monterey Jack cheese until melted and smooth.
- Combine the cooked pasta and taco beef mixture with the cheese sauce, stirring until evenly coated.
- Season with salt and pepper to taste, and garnish with cilantro or green onions before serving.
- Optional: Pour mixture into a baking dish, top with extra cheese, and bake at 375°F (190°C) for 10 minutes for a bubbly, golden finish.
