Description
Bite-sized cornbread poppers infused with honey butter for the perfect balance of sweet and savory, ideal as a snack, appetizer, or side dish.
Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/2 cup buttermilk
- 1/4 cup unsalted butter, melted
- 1/4 cup honey
- 1 large egg
- 1/4 cup unsalted butter (for honey butter topping)
- 2 tbsp honey (for honey butter topping)
Instructions
- Preheat oven to 375°F (190°C). Grease a mini muffin pan.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, combine milk, buttermilk, melted butter, honey, and egg. Mix until smooth.
- Pour wet ingredients into dry ingredients and stir until just combined (do not overmix).
- Spoon batter into mini muffin cups, filling each about 3/4 full.
- Bake for 12–15 minutes, until golden and a toothpick inserted in the center comes out clean.
- Meanwhile, melt butter and whisk with honey to make honey butter topping.
- Brush warm poppers with honey butter immediately after baking.
- Serve warm and enjoy.
Notes
- For extra sweetness, drizzle additional honey before serving.
- These can be made ahead and reheated in the oven for a few minutes.
