Description

Bite-sized cornbread poppers infused with honey butter for the perfect balance of sweet and savory, ideal as a snack, appetizer, or side dish.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/2 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 1/4 cup honey
  • 1 large egg
  • 1/4 cup unsalted butter (for honey butter topping)
  • 2 tbsp honey (for honey butter topping)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a mini muffin pan.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, combine milk, buttermilk, melted butter, honey, and egg. Mix until smooth.
  4. Pour wet ingredients into dry ingredients and stir until just combined (do not overmix).
  5. Spoon batter into mini muffin cups, filling each about 3/4 full.
  6. Bake for 12–15 minutes, until golden and a toothpick inserted in the center comes out clean.
  7. Meanwhile, melt butter and whisk with honey to make honey butter topping.
  8. Brush warm poppers with honey butter immediately after baking.
  9. Serve warm and enjoy.

Notes

  • For extra sweetness, drizzle additional honey before serving.
  • These can be made ahead and reheated in the oven for a few minutes.
