Description

Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chicken broth
  • 2 tbsp fresh parsley or cilantro, chopped


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes and cook for 5–7 minutes, stirring occasionally, until they begin to soften.
  3. Add the onion and bell pepper; sauté for 3 minutes.
  4. Push the vegetables to one side of the skillet and add the ground turkey. Cook until browned, breaking it up with a spoon.
  5. Stir in the garlic, paprika, cumin, chili powder, salt, and pepper.
  6. Pour in the chicken broth, cover the skillet, and let simmer for 8–10 minutes, or until the sweet potatoes are tender.
  7. Remove the lid and cook an additional 2 minutes to reduce excess liquid.
  8. Stir in chopped parsley or cilantro before serving.

Notes

  • For extra heat, add a pinch of red pepper flakes.
  • Top with avocado or a squeeze of lime for added flavor.
  • Use ground chicken instead of turkey if preferred.
