Description

Strawberry Crunch Cheesecake is a rich and creamy dessert with a buttery golden crust, smooth strawberry-flavored cheesecake filling, and a nostalgic strawberry crunch topping inspired by the classic ice cream bar. It’s the perfect blend of creamy, fruity, and crunchy textures.


Ingredients

  • 2 cups Golden Oreo cookie crumbs (about 24 cookies)
  • 5 tbsp unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 1/3 cup strawberry preserves or puree
  • 1/2 cup freeze-dried strawberries, crushed
  • 1/2 cup Golden Oreo crumbs (for topping)
  • 2 tbsp unsalted butter, melted (for topping)
  • Whipped cream and fresh strawberries for garnish (optional)


Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with foil.
  2. In a bowl, combine Golden Oreo crumbs and melted butter. Press into the bottom of the prepared pan to form a crust. Bake for 10 minutes, then let cool.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition.
  4. Blend in sour cream and vanilla extract until smooth.
  5. Divide the batter into two bowls. Stir strawberry preserves or puree into one portion to create the strawberry layer.
  6. Pour the plain batter into the crust, then carefully spoon the strawberry layer on top. Smooth the surface.
  7. Place the springform pan in a large roasting pan and fill halfway with hot water to create a water bath.
  8. Bake for 60–70 minutes, or until the center is just set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour with the door cracked open.
  9. Remove from oven, cool completely, and refrigerate for at least 4 hours or overnight.
  10. For the topping: Mix crushed freeze-dried strawberries, Oreo crumbs, and melted butter. Sprinkle evenly over the chilled cheesecake.
  11. Garnish with whipped cream and fresh strawberries before serving.
