Ingredients

  • 1 1/2 cups crushed golden sandwich cookies
  • 1/4 cup unsalted butter, melted
  • 12 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup heavy whipping cream
  • 1/2 tsp vanilla extract
  • 1/3 cup strawberry preserves or puree
  • 1 cup crushed strawberry-flavored cookies
  • 2 tbsp melted butter (for crunch topping)


Instructions

  1. Line a mini muffin pan with paper liners.
  2. Mix crushed golden cookies with melted butter and press into liners to form the crust.
  3. Beat cream cheese and sugar until smooth and creamy.
  4. Add vanilla extract and strawberry preserves, mixing until well combined.
  5. In a separate bowl, whip heavy cream until stiff peaks form.
  6. Fold whipped cream gently into the cream cheese mixture.
  7. Spoon the cheesecake filling over the crusts.
  8. Mix crushed strawberry cookies with melted butter and sprinkle on top.
  9. Refrigerate for at least 3 hours or until fully set.
  10. Serve chilled.
