Ingredients
- 1 1/2 cups crushed golden sandwich cookies
- 1/4 cup unsalted butter, melted
- 12 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/2 cup heavy whipping cream
- 1/2 tsp vanilla extract
- 1/3 cup strawberry preserves or puree
- 1 cup crushed strawberry-flavored cookies
- 2 tbsp melted butter (for crunch topping)
Instructions
- Line a mini muffin pan with paper liners.
- Mix crushed golden cookies with melted butter and press into liners to form the crust.
- Beat cream cheese and sugar until smooth and creamy.
- Add vanilla extract and strawberry preserves, mixing until well combined.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Fold whipped cream gently into the cream cheese mixture.
- Spoon the cheesecake filling over the crusts.
- Mix crushed strawberry cookies with melted butter and sprinkle on top.
- Refrigerate for at least 3 hours or until fully set.
- Serve chilled.
