Ingredients
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper, to taste
- 4 oz cream cheese, softened
- 1/4 cup mayonnaise (or Greek yogurt)
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese (divided)
- 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
- 1 clove garlic, minced
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil or cooking spray.
- Season chicken breasts with garlic powder, onion powder, salt, and pepper. Arrange them in the prepared baking dish.
- In a medium bowl, combine cream cheese, mayonnaise, Parmesan, half of the mozzarella, spinach, and minced garlic. Mix until smooth and well combined.
- Spread the spinach and cheese mixture evenly over the chicken breasts.
- Top with the remaining mozzarella cheese.
- Bake uncovered for 25–30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F / 74°C) and the cheese is melted and bubbly.
- For a golden top, broil for an additional 2–3 minutes if desired.
- Let rest for 5 minutes before serving. Serve warm with rice, pasta, or roasted vegetables.
