Description
A rich and comforting slow cooker soup made with tender chicken, sun-dried tomatoes, garlic, spinach, and a creamy broth inspired by Tuscan flavors.
Ingredients
- 1 lb (450 g) boneless skinless chicken breast
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 4 cups chicken broth
- 1 tsp dried Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
Instructions
- Add the chicken breasts to the slow cooker.
- Heat olive oil in a skillet over medium heat and sauté the onion for 3–4 minutes until soft. Add garlic and cook for 30 seconds.
- Transfer the onion and garlic to the slow cooker along with sun-dried tomatoes, chicken broth, Italian seasoning, paprika, salt, and pepper.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours.
- Remove the chicken, shred it with two forks, and return it to the slow cooker.
- Stir in the heavy cream and Parmesan cheese.
- Add the spinach and cook for another 10–15 minutes until wilted.
- Taste and adjust seasoning before serving.
Notes
- You can substitute heavy cream with half-and-half for a lighter version.
- Serve with crusty bread or over rice for a heartier meal.
- Leftovers store well in the refrigerator for up to 3 days.
