Description

A rich and comforting slow cooker soup made with tender chicken, sun-dried tomatoes, garlic, spinach, and a creamy broth inspired by Tuscan flavors.


Ingredients

  • 1 lb (450 g) boneless skinless chicken breast
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 cups chicken broth
  • 1 tsp dried Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach


Instructions

  1. Add the chicken breasts to the slow cooker.
  2. Heat olive oil in a skillet over medium heat and sauté the onion for 3–4 minutes until soft. Add garlic and cook for 30 seconds.
  3. Transfer the onion and garlic to the slow cooker along with sun-dried tomatoes, chicken broth, Italian seasoning, paprika, salt, and pepper.
  4. Cover and cook on low for 6–7 hours or on high for 3–4 hours.
  5. Remove the chicken, shred it with two forks, and return it to the slow cooker.
  6. Stir in the heavy cream and Parmesan cheese.
  7. Add the spinach and cook for another 10–15 minutes until wilted.
  8. Taste and adjust seasoning before serving.

Notes

  • You can substitute heavy cream with half-and-half for a lighter version.
  • Serve with crusty bread or over rice for a heartier meal.
  • Leftovers store well in the refrigerator for up to 3 days.
