Description
A hearty, comforting slow cooker soup made with Italian sausage, cheese tortellini, vegetables, and a rich, creamy broth.
Ingredients
- 1 lb Italian sausage
- 1 onion, diced
- 3 garlic cloves, minced
- 3 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 2 cups fresh spinach
- 1 lb cheese tortellini
- 1 cup heavy cream
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup grated Parmesan (optional)
Instructions
- Brown the Italian sausage in a skillet over medium heat, breaking it into crumbles. Drain excess fat.
- Add the sausage, onion, garlic, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper to the slow cooker. Stir to combine.
- Cook on low for 6 hours or on high for 3–4 hours.
- Stir in the heavy cream and tortellini. Cook on high for 20–30 minutes, or until the tortellini is tender.
- Add the spinach and cook for an additional 5 minutes until wilted.
- Stir in Parmesan before serving if desired.
Notes
- You can substitute Italian sausage with turkey sausage for a lighter version.
- Add crushed red pepper flakes for extra heat.
- Use kale instead of spinach if preferred.
