A hearty, comforting slow cooker soup made with Italian sausage, cheese tortellini, vegetables, and a rich, creamy broth.


Ingredients

  • 1 lb Italian sausage
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 3 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 2 cups fresh spinach
  • 1 lb cheese tortellini
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup grated Parmesan (optional)


Instructions

  1. Brown the Italian sausage in a skillet over medium heat, breaking it into crumbles. Drain excess fat.
  2. Add the sausage, onion, garlic, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper to the slow cooker. Stir to combine.
  3. Cook on low for 6 hours or on high for 3–4 hours.
  4. Stir in the heavy cream and tortellini. Cook on high for 20–30 minutes, or until the tortellini is tender.
  5. Add the spinach and cook for an additional 5 minutes until wilted.
  6. Stir in Parmesan before serving if desired.

Notes

  • You can substitute Italian sausage with turkey sausage for a lighter version.
  • Add crushed red pepper flakes for extra heat.
  • Use kale instead of spinach if preferred.
