Ingredients
- 1 lb sea scallops, patted dry
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup dry white wine
- 1/4 tsp saffron threads
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lemon juice
- 1 tbsp fresh parsley, finely chopped
Instructions
- Warm the cream gently and steep saffron threads in it for 10 minutes.
- Season scallops with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear scallops for 2–3 minutes per side until golden, then remove and set aside.
- Reduce heat and add butter and garlic to the pan, sautéing briefly.
- Deglaze with white wine and simmer until reduced by half.
- Add saffron cream and lemon juice, simmering until slightly thickened.
- Return scallops to the pan and spoon sauce over them for 1–2 minutes.
- Garnish with parsley and serve immediately.
Notes
- Use dry-packed scallops for best searing.
- Avoid overcooking scallops to keep them tender.
- Serve with risotto, pasta, or crusty bread.
