Description

A simple, flavorful meal featuring tender lemon-butter baked salmon served with crispy roasted potatoes and perfectly seasoned broccoli.


Ingredients

  • 2 salmon fillets (6 oz each)
  • 2 tbsp butter, melted
  • 1 tbsp olive oil
  • 1 lemon, sliced
  • 1 tbsp lemon juice
  • 2 garlic cloves, minced
  • 1 lb baby potatoes, halved
  • 3 cups broccoli florets
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss the halved baby potatoes with olive oil, paprika, salt, and pepper. Spread them on the baking sheet and roast for 15 minutes.
  3. In a small bowl, whisk together melted butter, lemon juice, garlic, and thyme.
  4. Push the potatoes to one side of the tray. Add the broccoli and drizzle with olive oil, salt, and pepper.
  5. Place the salmon fillets on the tray, skin-side down. Spoon the lemon-butter mixture evenly over the salmon and top with lemon slices.
  6. Return the tray to the oven and bake for 12–15 minutes, or until salmon flakes easily and potatoes are crispy.
  7. Serve warm with extra lemon if desired.

Notes

  • Add red pepper flakes for a touch of heat.
  • Substitute broccoli with asparagus or green beans.
  • For extra crispiness, broil the potatoes for the last 2 minutes.
