Description
A simple, flavorful meal featuring tender lemon-butter baked salmon served with crispy roasted potatoes and perfectly seasoned broccoli.
Ingredients
- 2 salmon fillets (6 oz each)
- 2 tbsp butter, melted
- 1 tbsp olive oil
- 1 lemon, sliced
- 1 tbsp lemon juice
- 2 garlic cloves, minced
- 1 lb baby potatoes, halved
- 3 cups broccoli florets
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss the halved baby potatoes with olive oil, paprika, salt, and pepper. Spread them on the baking sheet and roast for 15 minutes.
- In a small bowl, whisk together melted butter, lemon juice, garlic, and thyme.
- Push the potatoes to one side of the tray. Add the broccoli and drizzle with olive oil, salt, and pepper.
- Place the salmon fillets on the tray, skin-side down. Spoon the lemon-butter mixture evenly over the salmon and top with lemon slices.
- Return the tray to the oven and bake for 12–15 minutes, or until salmon flakes easily and potatoes are crispy.
- Serve warm with extra lemon if desired.
Notes
- Add red pepper flakes for a touch of heat.
- Substitute broccoli with asparagus or green beans.
- For extra crispiness, broil the potatoes for the last 2 minutes.
