Description

Soft and chewy cookies filled with a creamy cheesecake center and swirled with sweet strawberry jam, creating a decadent dessert in every bite.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • 1 cup white chocolate chips
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract (for filling)
  • 1/3 cup strawberry jam


Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt. Set aside.
  3. Cream butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in egg, egg yolk, and vanilla until combined.
  5. Gradually add dry ingredients, mixing until just combined. Stir in white chocolate chips.
  6. In a separate bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
  7. Scoop 2 tbsp of cookie dough and flatten. Place 1 tsp cream cheese mixture and 1/2 tsp strawberry jam in the center. Cover with another tbsp of dough and seal edges to form a ball.
  8. Place cookies 2 inches apart on baking sheets.
  9. Bake 12–14 minutes, until edges are lightly golden. Cool on the pan for 5 minutes before transferring to a rack.

Notes

  • Chill dough for 30 minutes before stuffing for easier handling.
  • Use seedless strawberry jam for a smoother texture.
  • Cookies are best enjoyed slightly warm when the filling is gooey.
  • Store leftovers in the refrigerator for up to 5 days.
