Description
Pineapple Paradise Cake is a tropical-inspired dessert made with moist pineapple cake layers topped with a creamy whipped frosting and extra pineapple for a sweet, refreshing finish.
Ingredients
- 1 box yellow cake mix
- 1 (20 oz) can crushed pineapple with juice
- 1 cup granulated sugar
- 1 (8 oz) package cream cheese, softened
- 1 (8 oz) container whipped topping (Cool Whip), thawed
- 1 (3.4 oz) box instant vanilla pudding mix
- 1/2 cup milk
- 1/2 cup shredded coconut (optional)
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Prepare cake mix according to package directions, substituting half of the water with pineapple juice from the can for extra flavor. Bake as directed, about 25–30 minutes.
- In a saucepan, combine crushed pineapple (with juice) and sugar. Cook over medium heat until slightly thickened, about 5 minutes. Set aside to cool.
- Once cake is baked, poke holes across the surface with a fork. Pour pineapple mixture evenly over the warm cake. Let cool completely.
- In a bowl, beat cream cheese until smooth. Add pudding mix and milk, mixing until thickened. Fold in whipped topping until combined.
- Spread cream cheese mixture over cooled cake. Top with coconut and pecans if desired.
- Chill in refrigerator for at least 2 hours before serving.
Notes
- For extra tropical flavor, add toasted coconut on top before serving.
- This cake tastes best after chilling overnight.
