Description

These classic Peanut Butter No-Bake Cookies are chewy, rich, and packed with the irresistible flavor of peanut butter and oats. They come together in minutes — no oven required — making them the perfect quick treat or lunchbox snack.


Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1 3/4 cups granulated sugar
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 3/4 cup creamy peanut butter
  • 3 cups quick-cooking oats
  • Pinch of salt (optional)


Instructions

  1. Line a baking sheet with parchment paper or wax paper and set aside.
  2. In a medium saucepan over medium heat, combine butter, sugar, and milk. Stir frequently until butter melts and the mixture comes to a full boil.
  3. Once boiling, cook for exactly 1 minute, then remove from heat immediately.
  4. Stir in vanilla extract and peanut butter until smooth and fully melted.
  5. Add oats and mix until evenly coated and combined.
  6. Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet.
  7. Allow cookies to cool and set at room temperature for about 30–40 minutes or refrigerate to speed up the process.
  8. Store in an airtight container at room temperature for up to 5 days.

Notes

  • For chewier cookies, reduce oats slightly; for firmer cookies, add a few more tablespoons of oats.
  • You can use crunchy peanut butter for added texture.
  • Do not overcook the sugar mixture — boiling longer than 1 minute can make the cookies dry and crumbly.
