Ingredients
- 2 pounds potatoes, peeled and thinly sliced
- 1 large onion, thinly sliced
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme or rosemary (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Lightly grease a large baking dish or sheet pan.
- In a large bowl, combine the sliced potatoes and onions.
- Add olive oil, salt, black pepper, paprika, garlic powder, and herbs if using. Toss until evenly coated.
- Spread the mixture evenly in the prepared baking dish.
- Cover loosely with foil and bake for 25 minutes.
- Remove foil, stir gently, and return to the oven.
- Bake uncovered for another 20–25 minutes, stirring once, until potatoes are tender and golden brown.
- Serve hot.
Notes
- For extra crispiness, use a metal baking pan.
- You can add bell peppers or mushrooms for variation.
