Description

Monterey Chicken Spaghetti is a creamy, cheesy pasta dish made with tender chicken, spaghetti, bacon, tomatoes, and Monterey Jack cheese, baked until bubbly and comforting.


Ingredients

  • 12 oz spaghetti
  • 2 cups cooked chicken breast, shredded or diced
  • 6 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 2 cups Monterey Jack cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 2 tablespoons chopped green onions (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds.
  4. Stir in the cream of chicken soup and heavy cream. Season with salt, pepper, and paprika.
  5. Add cooked chicken, bacon, and tomatoes. Mix well.
  6. Combine the sauce with cooked spaghetti and half of the cheeses.
  7. Transfer the mixture to a greased baking dish.
  8. Top with remaining Monterey Jack and cheddar cheese.
  9. Bake uncovered for 25–30 minutes, or until cheese is melted and bubbly.
  10. Garnish with green onions if desired and serve warm.

Notes

  • You can use rotisserie chicken to save time.
  • Swap Monterey Jack with mozzarella if needed.
  • Add jalapeños for a spicy kick.
  • This dish reheats well and is freezer-friendly.
