Description
Monterey Chicken Spaghetti is a creamy, cheesy pasta dish made with tender chicken, spaghetti, bacon, tomatoes, and Monterey Jack cheese, baked until bubbly and comforting.
Ingredients
- 12 oz spaghetti
- 2 cups cooked chicken breast, shredded or diced
- 6 slices bacon, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 2 cups Monterey Jack cheese, shredded
- 1 cup cheddar cheese, shredded
- 1 can (10.5 oz) cream of chicken soup
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 2 tablespoons chopped green onions (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds.
- Stir in the cream of chicken soup and heavy cream. Season with salt, pepper, and paprika.
- Add cooked chicken, bacon, and tomatoes. Mix well.
- Combine the sauce with cooked spaghetti and half of the cheeses.
- Transfer the mixture to a greased baking dish.
- Top with remaining Monterey Jack and cheddar cheese.
- Bake uncovered for 25–30 minutes, or until cheese is melted and bubbly.
- Garnish with green onions if desired and serve warm.
Notes
- You can use rotisserie chicken to save time.
- Swap Monterey Jack with mozzarella if needed.
- Add jalapeños for a spicy kick.
- This dish reheats well and is freezer-friendly.
