Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar (plus extra for rolling)
  • 1 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup mini chocolate chips
  • Green food coloring (optional, for festive look)


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter and powdered sugar until light and fluffy.
  3. Mix in peppermint extract, vanilla extract, and a few drops of green food coloring if using.
  4. Gradually add flour and salt, mixing until dough comes together.
  5. Stir in mini chocolate chips.
  6. Roll dough into 1-inch balls and place on prepared baking sheet.
  7. Bake for 12–14 minutes, until set but not browned.
  8. Let cool slightly, then roll warm cookies in powdered sugar. Cool completely and roll again for a snowy finish.
