Description

A hearty, cheesy, and flavor-packed baked dip loaded with seasoned beef, refried beans, cream cheese, sour cream, and melted cheese — perfect for game day or any party crowd-pleaser.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning (or 2 tbsp homemade blend)
  • 1 can (16 oz) refried beans
  • 1 package (8 oz) cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded Mexican blend or cheddar cheese (divided)
  • 1 cup salsa or Rotel (drained if using Rotel)
  • 1/4 cup chopped green onions
  • 1/4 cup sliced black olives (optional)
  • Tortilla chips, for serving


Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, cook ground beef over medium-high heat until browned. Drain excess fat.
  3. Add taco seasoning and 2–3 tablespoons of water, stirring until well coated. Cook for 1–2 minutes, then remove from heat.
  4. In a large bowl, mix together refried beans, cream cheese, sour cream, and 1 cup shredded cheese until smooth and combined.
  5. Stir in the cooked taco meat and salsa (or Rotel).
  6. Spread the mixture evenly into the prepared baking dish and top with the remaining 1 cup of cheese.
  7. Bake for 25–30 minutes, until hot and bubbly.
  8. Remove from oven and top with green onions and olives, if desired.
  9. Serve warm with tortilla chips for dipping.

Notes

  • Use spicy taco seasoning or hot Rotel for extra heat.
  • Can be made ahead of time and refrigerated — just bake an additional 10 minutes when ready to serve.
