Description

Crispy Italian-style chicken cutlets topped with fresh basil pesto and creamy burrata cheese, finished with a touch of olive oil for an elegant and flavorful meal.


Ingredients

  • 4 boneless, skinless chicken breasts, pounded thin
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tbsp water
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/3 cup olive oil (for frying)
  • 1/2 cup basil pesto
  • 8 oz burrata cheese
  • Fresh basil leaves (optional)


Instructions

  1. Set up a breading station with flour in one bowl, eggs whisked with water in a second bowl, and breadcrumbs mixed with Parmesan, salt, pepper, garlic powder, and oregano in a third bowl.
  2. Dredge each chicken cutlet in flour, dip into egg mixture, then coat evenly with breadcrumb mixture.
  3. Heat olive oil in a large skillet over medium heat.
  4. Fry chicken cutlets for 3–4 minutes per side until golden brown and cooked through. Transfer to a paper towel-lined plate.
  5. Arrange chicken cutlets on a serving platter.
  6. Spoon basil pesto over each cutlet.
  7. Tear burrata cheese and place generously on top.
  8. Garnish with fresh basil leaves if desired and serve immediately.
