Ingredients
- 4 boneless, skinless chicken breasts, pounded thin
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 tbsp water
- 1 cup Italian-style breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/3 cup olive oil (for frying)
- 1/2 cup basil pesto
- 8 oz burrata cheese
- Fresh basil leaves (optional)
Instructions
- Set up a breading station with flour in one bowl, eggs whisked with water in a second bowl, and breadcrumbs mixed with Parmesan, salt, pepper, garlic powder, and oregano in a third bowl.
- Dredge each chicken cutlet in flour, dip into egg mixture, then coat evenly with breadcrumb mixture.
- Heat olive oil in a large skillet over medium heat.
- Fry chicken cutlets for 3–4 minutes per side until golden brown and cooked through. Transfer to a paper towel-lined plate.
- Arrange chicken cutlets on a serving platter.
- Spoon basil pesto over each cutlet.
- Tear burrata cheese and place generously on top.
- Garnish with fresh basil leaves if desired and serve immediately.
Notes
- Serve with roasted vegetables or a simple arugula salad.
- Do not overcook the chicken to keep it juicy.
- Add a drizzle of balsamic glaze for extra flavor.
