Ingredients
- 2 lbs beef stew meat, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 medium onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 3 cups beef broth
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 2 bay leaves
- 3 medium potatoes, peeled and cubed
- 1 cup frozen peas
- 3 tablespoons cornstarch
- 3 tablespoons water (for slurry)
Instructions
- Season beef with salt, pepper, and garlic powder.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown beef in batches, then remove and set aside.
- Add onions to the pot and cook 3–4 minutes until softened. Add minced garlic and cook 1 minute.
- Add carrots and celery and sauté 3 minutes.
- Pour in beef broth, water, Worcestershire sauce, thyme, paprika, and bay leaves. Stir well.
- Return beef to the pot, bring to a simmer, then reduce heat to low.
- Cover and cook for 1 hour.
- Add potatoes and continue simmering for 30–40 minutes, or until beef and potatoes are tender.
- Mix cornstarch with water to form a slurry and stir into the stew. Simmer until thickened.
- Stir in frozen peas and cook 3 minutes more.
- Remove bay leaves and serve hot.

- For even richer flavor, add 1/2 cup red wine when adding broth.
