Ingredients

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 3 cups beef broth
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 bay leaves
  • 3 medium potatoes, peeled and cubed
  • 1 cup frozen peas
  • 3 tablespoons cornstarch
  • 3 tablespoons water (for slurry)


Instructions

  1. Season beef with salt, pepper, and garlic powder.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown beef in batches, then remove and set aside.
  3. Add onions to the pot and cook 3–4 minutes until softened. Add minced garlic and cook 1 minute.
  4. Add carrots and celery and sauté 3 minutes.
  5. Pour in beef broth, water, Worcestershire sauce, thyme, paprika, and bay leaves. Stir well.
  6. Return beef to the pot, bring to a simmer, then reduce heat to low.
  7. Cover and cook for 1 hour.
  8. Add potatoes and continue simmering for 30–40 minutes, or until beef and potatoes are tender.
  9. Mix cornstarch with water to form a slurry and stir into the stew. Simmer until thickened.
  10. Stir in frozen peas and cook 3 minutes more.
  11. Remove bay leaves and serve hot.

  • For even richer flavor, add 1/2 cup red wine when adding broth.
  • Sear the beef well—this builds the stew’s deep flavor.
  • Use Yukon gold potatoes for the creamiest texture.
