Ingredients

- 1 lb beef sirloin or flank steak, thinly sliced
- 2 cups cooked white or brown rice
- 1 cup shredded lettuce or cabbage
- 1/2 cup sliced cucumbers
- 1/2 cup shredded carrots
- 2 green onions, chopped
- 1 tbsp sesame seeds (for garnish)
Beef Marinade:

- 3 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1/4 tsp black pepper
Creamy Sauce:
- 1/4 cup mayonnaise
- 2 tbsp plain Greek yogurt or sour cream
- 1 tbsp soy sauce
- 1 tsp honey
- 1/2 tsp garlic powder
- 1 tsp sriracha or chili paste (optional, for heat)
Instructions
- In a medium bowl, whisk together marinade ingredients. Add sliced beef, toss to coat, and marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
- In a small bowl, whisk together creamy sauce ingredients until smooth. Refrigerate until ready to use.
- Preheat a grill or grill pan over medium-high heat. Lightly oil the grates.
- Grill the marinated beef slices for 2–3 minutes per side, until nicely charred and cooked through. Remove and let rest for 5 minutes.
- Assemble bowls by layering rice, lettuce, cucumbers, and carrots.
- Top each bowl with grilled beef, drizzle with creamy sauce, and sprinkle with green onions and sesame seeds.
- Serve warm and enjoy!
