Description
Tender grilled chicken skewers coated in a rich garlic parmesan marinade, bursting with savory flavor and perfect for weeknight dinners or entertaining.
Ingredients
- 1 1/2 lbs chicken breasts, cut into 1-inch cubes
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/3 cup grated Parmesan cheese
- 1 tbsp lemon juice
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.
- In a bowl, whisk together olive oil, garlic, Parmesan, lemon juice, Italian seasoning, paprika, salt, and pepper.
- Add the chicken pieces and toss to coat evenly. Marinate for at least 30 minutes or up to 4 hours.
- Thread the marinated chicken onto the skewers.
- Preheat a grill or grill pan over medium-high heat.
- Cook the skewers for 8–10 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
- Transfer to a plate and sprinkle with fresh parsley before serving.
Notes
- For extra flavor, reserve a small amount of marinade (before adding raw chicken) to brush on during grilling.
- Serve with rice, salad, or warm pita bread.
- Try adding vegetables like bell peppers, onions, or zucchini to the skewers.
