Description

Tender grilled chicken skewers coated in a rich garlic parmesan marinade, bursting with savory flavor and perfect for weeknight dinners or entertaining.

Ingredients

  • 1 1/2 lbs chicken breasts, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.
  2. In a bowl, whisk together olive oil, garlic, Parmesan, lemon juice, Italian seasoning, paprika, salt, and pepper.
  3. Add the chicken pieces and toss to coat evenly. Marinate for at least 30 minutes or up to 4 hours.
  4. Thread the marinated chicken onto the skewers.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Cook the skewers for 8–10 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
  7. Transfer to a plate and sprinkle with fresh parsley before serving.

Notes

  • For extra flavor, reserve a small amount of marinade (before adding raw chicken) to brush on during grilling.
  • Serve with rice, salad, or warm pita bread.
  • Try adding vegetables like bell peppers, onions, or zucchini to the skewers.
