Ingredients

  • 1.5 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 cups broccoli florets
  • 3 cups fresh spinach
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup chicken broth
  • 1 tbsp lemon juice


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces, season with salt, pepper, paprika, and red pepper flakes, and cook until lightly golden and cooked through.
  3. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Stir in broccoli florets and chicken broth. Cover and cook for 4–5 minutes until broccoli is tender-crisp.
  5. Add spinach and cook until wilted.
  6. Drizzle with lemon juice, stir well, and remove from heat.
  7. Taste and adjust seasoning before serving.

Notes

  • Serve over rice, quinoa, or cauliflower rice.
  • Do not overcook spinach to preserve nutrients.
