Description
A delicious low-carb twist on classic grilled cheese, using tender zucchini slices layered with gooey melted cheese and brushed with rich garlic butter.
Ingredients
- 2 medium zucchini
- 2 tbsp unsalted butter, melted
- 1 clove garlic, minced
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp grated Parmesan cheese (optional)
- Fresh parsley, chopped (optional)
Instructions
- Slice zucchini lengthwise into 1/4-inch thick slices.
- In a small bowl, mix melted butter and garlic.
- Brush zucchini slices with garlic butter and season lightly with salt and pepper.
- Heat a non-stick skillet or grill pan over medium heat.
- Cook zucchini slices for 2–3 minutes per side until lightly golden and tender.
- Place mozzarella and cheddar cheese on one zucchini slice, then top with another slice to form a sandwich.
- Sprinkle Parmesan on the outside if desired.
- Return to skillet and cook until cheese is melted and edges are crisp.
- Garnish with parsley and serve immediately.
Notes
- Use a mandoline for evenly sliced zucchini.
- Pat zucchini dry to avoid excess moisture.
- Add tomato slices or basil for extra flavor.
