Description

A delicious low-carb twist on classic grilled cheese, using tender zucchini slices layered with gooey melted cheese and brushed with rich garlic butter.


Ingredients

  • 2 medium zucchini
  • 2 tbsp unsalted butter, melted
  • 1 clove garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp grated Parmesan cheese (optional)
  • Fresh parsley, chopped (optional)


Instructions

  1. Slice zucchini lengthwise into 1/4-inch thick slices.
  2. In a small bowl, mix melted butter and garlic.
  3. Brush zucchini slices with garlic butter and season lightly with salt and pepper.
  4. Heat a non-stick skillet or grill pan over medium heat.
  5. Cook zucchini slices for 2–3 minutes per side until lightly golden and tender.
  6. Place mozzarella and cheddar cheese on one zucchini slice, then top with another slice to form a sandwich.
  7. Sprinkle Parmesan on the outside if desired.
  8. Return to skillet and cook until cheese is melted and edges are crisp.
  9. Garnish with parsley and serve immediately.

Notes

  • Use a mandoline for evenly sliced zucchini.
  • Pat zucchini dry to avoid excess moisture.
