Ingredients
- 12 oz spaghetti or linguine
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 5 cloves garlic, minced
- 1/2 tsp crushed red pepper flakes (optional)
- 1/2 cup dry white wine or chicken broth
- 1 tbsp lemon juice
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- Salt and black pepper, to taste
Instructions
- Cook pasta in salted boiling water according to package directions until al dente. Drain, reserving 1/2 cup of pasta water.
- Season shrimp with salt and pepper.
- In a large skillet, heat olive oil and 2 tbsp butter over medium-high heat. Add shrimp and cook 1–2 minutes per side until pink and opaque. Remove and set aside.
- In the same skillet, melt remaining butter. Add garlic and red pepper flakes, cooking for 30 seconds until fragrant.
- Pour in white wine (or chicken broth) and simmer for 2–3 minutes, scraping up any browned bits.
- Reduce heat to low, add cooked pasta and toss to coat in the garlic butter sauce. Add reserved pasta water as needed for desired consistency.
- Return shrimp to the skillet, squeeze in lemon juice, and toss everything together.
- Sprinkle with Parmesan cheese and parsley before serving.
