Description

French Onion Ground Beef and Rice Casserole is a savory, comforting dish made with seasoned ground beef, fluffy rice, caramelized onions, and a creamy sauce baked together under a blanket of melted cheese. It’s an easy one-pan meal with all the flavors of French onion soup in casserole form.


Ingredients

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 2 1/2 cups beef broth
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp dried thyme
  • Salt and black pepper, to taste
  • 1 1/2 cups shredded Swiss cheese (or Gruyère for authenticity)
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil and cook onions over medium heat for 15–20 minutes, stirring occasionally, until caramelized. Add garlic and cook for 1 minute more.
  3. Push onions to the side, add ground beef, and cook until browned. Drain excess fat.
  4. Stir in uncooked rice, beef broth, cream of mushroom soup, Worcestershire sauce, thyme, salt, and pepper. Mix well.
  5. Transfer mixture to the prepared baking dish and spread evenly. Cover tightly with foil.
  6. Bake for 45–50 minutes, or until rice is tender.
  7. Remove foil, sprinkle cheese over the top, and bake uncovered for another 10 minutes, until cheese is melted and bubbly.
  8. Garnish with parsley before serving.

Notes

  • For extra flavor, use Gruyère cheese instead of Swiss.
  • Can be prepped ahead and refrigerated before baking.
  • Serve with a crisp salad or roasted vegetables for a complete meal.
