Ingredients
- 1 1/2 cups all-purpose flour
- 3 1/2 tsp baking powder
- 1 tbsp granulated sugar
- 1/2 tsp salt
- 1 1/4 cups milk
- 1 large egg
- 3 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- Optional: butter and maple syrup for serving
Instructions
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- In another bowl, whisk milk, egg, melted butter, and vanilla until combined.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; some lumps are fine.
- Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and edges look set, about 2โ3 minutes.
- Flip and cook for another 1โ2 minutes, until golden brown and fluffy.
- Serve warm with butter, syrup, or desired toppings.
Notes
- Do not overmix the batterโthis keeps the pancakes light and fluffy.
- For extra flavor, add blueberries, chocolate chips, or bananas to the batter before cooking.
- Keep pancakes warm in a low oven (200ยฐF/95ยฐC) if making a large batch.
