Description
Filipino Chicken Asado is a comforting stew made with tender chicken simmered in a tangy tomato and soy sauce glaze, lightly sweetened and infused with garlic and bay leaves for a rich, savory-sweet flavor.
Ingredients
- 2 lbs chicken thighs and drumsticks
- 3 tbsp cooking oil
- 5 cloves garlic, minced
- 1 medium onion, chopped
- 1/2 cup tomato sauce
- 1/3 cup soy sauce
- 1/4 cup brown sugar
- 1 cup water or chicken broth
- 2 bay leaves
- 1 tsp black pepper
- 1 tbsp calamansi or lemon juice
Instructions
- Heat oil in a large pot over medium heat.
- Sauté garlic and onion until fragrant and translucent.
- Add chicken pieces and cook until lightly browned.
- Pour in soy sauce and tomato sauce, then stir well.
- Add brown sugar, bay leaves, black pepper, and water or broth.
- Bring to a boil, then lower heat and simmer for 30–35 minutes until chicken is tender.
- Add calamansi or lemon juice and simmer for another 5 minutes.
- Taste and adjust seasoning if needed, then serve hot.
Notes
- This dish tastes even better the next day.
- You can add boiled eggs or potatoes for variation.
- Serve with steamed white rice.
