Description

Filipino Chicken Asado is a comforting stew made with tender chicken simmered in a tangy tomato and soy sauce glaze, lightly sweetened and infused with garlic and bay leaves for a rich, savory-sweet flavor.


Ingredients

  • 2 lbs chicken thighs and drumsticks
  • 3 tbsp cooking oil
  • 5 cloves garlic, minced
  • 1 medium onion, chopped
  • 1/2 cup tomato sauce
  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 1 cup water or chicken broth
  • 2 bay leaves
  • 1 tsp black pepper
  • 1 tbsp calamansi or lemon juice


Instructions

  1. Heat oil in a large pot over medium heat.
  2. Sauté garlic and onion until fragrant and translucent.
  3. Add chicken pieces and cook until lightly browned.
  4. Pour in soy sauce and tomato sauce, then stir well.
  5. Add brown sugar, bay leaves, black pepper, and water or broth.
  6. Bring to a boil, then lower heat and simmer for 30–35 minutes until chicken is tender.
  7. Add calamansi or lemon juice and simmer for another 5 minutes.
  8. Taste and adjust seasoning if needed, then serve hot.

Notes

  • This dish tastes even better the next day.
  • You can add boiled eggs or potatoes for variation.
