Description
Golden, crispy cabbage fritters packed with Parmesan cheese and herbs, served with a creamy roasted garlic dip — a savory snack or side dish that’s crispy on the outside and tender on the inside.
Ingredients
- 3 cups finely shredded green cabbage
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1/4 tsp baking powder
- 2 tbsp chopped parsley
- 2–3 tbsp olive oil (for frying)
- For the roasted garlic dip:
- 1 head garlic
- 1 tsp olive oil
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30–35 minutes until soft. Let cool, then squeeze out the cloves into a bowl.
- In a small bowl, mix roasted garlic, mayonnaise, sour cream, lemon juice, salt, and pepper. Stir well and chill until ready to serve.
- In a large bowl, combine shredded cabbage, Parmesan, flour, eggs, green onions, garlic, salt, pepper, paprika, baking powder, and parsley. Mix until well combined.
- Heat olive oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the cabbage mixture per fritter and flatten slightly in the pan. Fry for 3–4 minutes per side until golden brown and crispy.
- Remove and place on paper towels to drain excess oil.
- Serve warm with roasted garlic dip.
Notes
- Use a mix of green and purple cabbage for a colorful presentation.
- Air-fryer method: Cook at 375°F (190°C) for 10–12 minutes, flipping halfway.
- Add a bit of shredded zucchini or carrot for extra texture.
- These fritters pair wonderfully with grilled meats or as a vegetarian main course.
