Description

Golden, crispy cabbage fritters packed with Parmesan cheese and herbs, served with a creamy roasted garlic dip — a savory snack or side dish that’s crispy on the outside and tender on the inside.


Ingredients

  • 3 cups finely shredded green cabbage
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 tsp baking powder
  • 2 tbsp chopped parsley
  • 23 tbsp olive oil (for frying)
  • For the roasted garlic dip:
  • 1 head garlic
  • 1 tsp olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tsp lemon juice
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C). Slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30–35 minutes until soft. Let cool, then squeeze out the cloves into a bowl.
  2. In a small bowl, mix roasted garlic, mayonnaise, sour cream, lemon juice, salt, and pepper. Stir well and chill until ready to serve.
  3. In a large bowl, combine shredded cabbage, Parmesan, flour, eggs, green onions, garlic, salt, pepper, paprika, baking powder, and parsley. Mix until well combined.
  4. Heat olive oil in a large skillet over medium heat.
  5. Scoop about 1/4 cup of the cabbage mixture per fritter and flatten slightly in the pan. Fry for 3–4 minutes per side until golden brown and crispy.
  6. Remove and place on paper towels to drain excess oil.
  7. Serve warm with roasted garlic dip.

Notes

  • Use a mix of green and purple cabbage for a colorful presentation.
  • Air-fryer method: Cook at 375°F (190°C) for 10–12 minutes, flipping halfway.
  • Add a bit of shredded zucchini or carrot for extra texture.
