Description
Golden, oven-baked potato wedges coated in garlic, Parmesan, and herbs for a crispy and flavorful side dish or snack.
Ingredients
- 4 large russet potatoes, cut into wedges
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut potatoes into wedges and place in a large bowl.
- Add olive oil, garlic, Parmesan, Italian seasoning, paprika, salt, and pepper. Toss until evenly coated.
- Arrange wedges on the prepared baking sheet in a single layer, skin side down.
- Bake for 35–40 minutes, flipping halfway through, until golden brown and crispy.
- Remove from oven, sprinkle with fresh parsley, and serve immediately.
Notes
- Soak potato wedges in cold water for 20–30 minutes before baking for extra crispiness.
- Serve with ranch dressing, garlic aioli, or ketchup as a dip.
- Yukon gold potatoes can also be used for a creamier texture.
