Description

Golden, oven-baked potato wedges coated in garlic, Parmesan, and herbs for a crispy and flavorful side dish or snack.


Ingredients

  • 4 large russet potatoes, cut into wedges
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut potatoes into wedges and place in a large bowl.
  3. Add olive oil, garlic, Parmesan, Italian seasoning, paprika, salt, and pepper. Toss until evenly coated.
  4. Arrange wedges on the prepared baking sheet in a single layer, skin side down.
  5. Bake for 35–40 minutes, flipping halfway through, until golden brown and crispy.
  6. Remove from oven, sprinkle with fresh parsley, and serve immediately.

Notes

  • Soak potato wedges in cold water for 20–30 minutes before baking for extra crispiness.
  • Serve with ranch dressing, garlic aioli, or ketchup as a dip.
  • Yukon gold potatoes can also be used for a creamier texture.
