Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach or kale, chopped
  • Salt and black pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it up into small pieces.
  2. Add diced onion, garlic, carrots, and celery. Sauté for 5 minutes until vegetables begin to soften.
  3. Stir in Italian seasoning and crushed red pepper flakes.
  4. Pour in chicken broth and water, then bring to a boil.
  5. Add the ditalini pasta and cook until al dente, about 8-10 minutes.
