Ingredients
- 1 lb Italian sausage
- 1 tbsp olive oil
- 1 small onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 cup ditalini pasta
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional)
- Salt and black pepper to taste
- 2 cups fresh spinach, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it into crumbles.
- Add onion, carrots, and celery. Cook for 5–7 minutes until softened.
- Stir in garlic and cook for 1 minute more.
- Pour in chicken broth and add Italian seasoning and red pepper flakes. Bring to a boil.
- Add ditalini pasta and cook according to package instructions until al dente.
- Reduce heat to low. Stir in heavy cream and Parmesan cheese until melted and creamy.
- Add spinach and cook for 2 minutes until wilted.
- Season with salt and pepper to taste.
- Serve warm with extra Parmesan if desired.
Notes
- Substitute kale for spinach for a heartier texture.
- Use mild or hot sausage depending on your heat preference.
- Add more broth if the soup thickens over time.
- For extra richness, stir in 2 tablespoons of butter at the end.
