A cozy, creamy Italian-style soup made with savory sausage, tender ditalini pasta, vegetables, and Parmesan for a rich and comforting flavor.


Ingredients

  • 1 lb Italian sausage
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 cups fresh spinach, chopped


Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it into crumbles.
  2. Add onion, carrots, and celery. Cook for 5–7 minutes until softened.
  3. Stir in garlic and cook for 1 minute more.
  4. Pour in chicken broth and add Italian seasoning and red pepper flakes. Bring to a boil.
  5. Add ditalini pasta and cook according to package instructions until al dente.
  6. Reduce heat to low. Stir in heavy cream and Parmesan cheese until melted and creamy.
  7. Add spinach and cook for 2 minutes until wilted.
  8. Season with salt and pepper to taste.
  9. Serve warm with extra Parmesan if desired.

  • Substitute kale for spinach for a heartier texture.
