Description
A rich and comforting casserole inspired by jalapeño poppers, combining tender chicken, creamy cheese sauce, smoky bacon, and a mild spicy kick, all baked until bubbly and golden.
Ingredients
- 2 cups cooked chicken breast, shredded
- 6 oz cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup cooked beef bacon, crumbled
- 1/2 cup jalapeños, diced (fresh or pickled, seeds removed)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt to taste
- Black pepper to taste
- 1/2 cup crushed crackers or breadcrumbs
- 2 tbsp butter, melted
Instructions
- Preheat oven to 375°F (190°C) and grease a casserole dish.
- In a large bowl, mix cream cheese and sour cream until smooth.
- Stir in shredded chicken, jalapeños, bacon, garlic powder, onion powder, salt, and pepper.
- Fold in half of the cheddar and mozzarella cheeses.
- Spread mixture evenly into the prepared casserole dish.
- In a small bowl, combine crushed crackers with melted butter.
- Sprinkle remaining cheese over the casserole, then top with buttered crumbs.
- Bake uncovered for 25–30 minutes until hot, bubbly, and lightly golden.
- Let rest for 5 minutes before serving.
Notes
- Adjust jalapeños to control the spice level.
- Serve with rice, pasta, or tortilla chips.
- Can be assembled ahead and baked when ready.
