Description

A rich and comforting casserole inspired by jalapeño poppers, combining tender chicken, creamy cheese sauce, smoky bacon, and a mild spicy kick, all baked until bubbly and golden.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 6 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cooked beef bacon, crumbled
  • 1/2 cup jalapeños, diced (fresh or pickled, seeds removed)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup crushed crackers or breadcrumbs
  • 2 tbsp butter, melted


Instructions

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. In a large bowl, mix cream cheese and sour cream until smooth.
  3. Stir in shredded chicken, jalapeños, bacon, garlic powder, onion powder, salt, and pepper.
  4. Fold in half of the cheddar and mozzarella cheeses.
  5. Spread mixture evenly into the prepared casserole dish.
  6. In a small bowl, combine crushed crackers with melted butter.
  7. Sprinkle remaining cheese over the casserole, then top with buttered crumbs.
  8. Bake uncovered for 25–30 minutes until hot, bubbly, and lightly golden.
  9. Let rest for 5 minutes before serving.
