Ingredients
- 12 oz (340g) linguine pasta
- 1 lb (450g) boneless, skinless chicken breasts, sliced thin
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 5 cloves garlic, minced
- 1 cup (240ml) heavy cream
- 1/2 cup (120ml) chicken broth
- 3/4 cup (75g) grated Parmesan cheese
- 1 cup (100g) shredded mozzarella cheese
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp crushed red pepper flakes (optional)
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Cook linguine according to package directions in salted water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- Season chicken with salt, pepper, and half of the Italian seasoning.
- In a large skillet, heat olive oil over medium-high heat. Add chicken and cook 5–7 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, melt butter. Add minced garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
- Whisk in Parmesan cheese until melted and smooth, then add mozzarella cheese. Stir until the sauce becomes creamy and cohesive.
- Season with remaining Italian seasoning, red pepper flakes, and adjust salt and pepper to taste.
- Add the cooked linguine and chicken to the skillet. Toss well to coat evenly, adding a bit of reserved pasta water if needed for consistency.
- Simmer for 2–3 minutes to let flavors meld together.
- Garnish with parsley and serve hot with extra Parmesan on top if desired.

- For extra richness, substitute half of the chicken broth with white wine.
