Description

A comforting and hearty Creamy Chicken & Rice Casserole made with tender chicken, fluffy rice, and a rich, savory cream sauce baked to perfection.


Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup onion, finely chopped
  • 1/2 cup frozen peas or mixed vegetables
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish.
  3. In a large bowl, mix uncooked rice, chicken broth, cream of chicken soup, and milk until well combined.
  4. Stir in the cooked chicken, onion, frozen vegetables, garlic powder, salt, black pepper, and paprika.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Drizzle melted butter over the top and sprinkle with shredded cheddar cheese.
  7. Cover tightly with aluminum foil and bake for 45 minutes.
  8. Remove foil and bake for an additional 15 minutes, or until rice is tender and the top is lightly golden.
  9. Let rest for 5 minutes before serving.

Notes

  • Use rotisserie chicken for convenience.
  • Brown rice can be used but will require extra liquid and baking time.
