Ingredients
- 12 oz fettuccine or penne pasta
- 1 lb boneless, skinless chicken breast, sliced into strips
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 2 cups mushrooms, sliced (cremini or button)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- Season chicken with salt, pepper, and half of the Italian seasoning.
- In a large skillet, heat olive oil over medium heat. Cook chicken until golden brown and cooked through, about 5–7 minutes. Remove and set aside.
- In the same skillet, melt butter and sauté garlic and onions until fragrant and translucent, about 1–2 minutes.
- Add mushrooms and cook until they release moisture and turn golden, about 5 minutes.
- Pour in chicken broth and heavy cream. Stir and simmer until slightly thickened, about 3–4 minutes.
- Stir in Parmesan cheese and remaining Italian seasoning. Mix until sauce becomes creamy and smooth.
- Return cooked chicken and pasta to the skillet. Toss well to coat everything evenly in the sauce.
- Adjust seasoning with salt and pepper. Garnish with chopped parsley and serve warm.

- Use half-and-half instead of heavy cream for a lighter version.
- Add spinach or sun-dried tomatoes for extra flavor and color.
- Reserve a bit of pasta water to adjust sauce consistency if needed.
