Description

Creamy Chicken & Mushroom Pasta is a rich and comforting dish featuring tender chicken, earthy mushrooms, and perfectly cooked pasta coated in a luscious garlic cream sauce. It’s a quick yet indulgent meal that’s perfect for weeknight dinners or special occasions.


Ingredients

  • 12 oz fettuccine or penne pasta
  • 1 lb boneless, skinless chicken breast, sliced into strips
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 cups mushrooms, sliced (cremini or button)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. Season chicken with salt, pepper, and half of the Italian seasoning.
  3. In a large skillet, heat olive oil over medium heat. Cook chicken until golden brown and cooked through, about 5–7 minutes. Remove and set aside.
  4. In the same skillet, melt butter and sauté garlic and onions until fragrant and translucent, about 1–2 minutes.
  5. Add mushrooms and cook until they release moisture and turn golden, about 5 minutes.
  6. Pour in chicken broth and heavy cream. Stir and simmer until slightly thickened, about 3–4 minutes.
  7. Stir in Parmesan cheese and remaining Italian seasoning. Mix until sauce becomes creamy and smooth.
  8. Return cooked chicken and pasta to the skillet. Toss well to coat everything evenly in the sauce.
  9. Adjust seasoning with salt and pepper. Garnish with chopped parsley and serve warm.

  • Use half-and-half instead of heavy cream for a lighter version.
  • Add spinach or sun-dried tomatoes for extra flavor and color.
  • Reserve a bit of pasta water to adjust sauce consistency if needed.
