Description

Creamy Chicken Macaroni Salad is a hearty and refreshing dish made with tender pasta, shredded chicken, crisp vegetables, and a creamy dressing. Perfect as a side dish or light meal for picnics, barbecues, or potlucks.


Ingredients

  • 2 cups elbow macaroni, uncooked
  • 2 cups cooked chicken breast, shredded
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/2 cup celery, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup carrots, grated
  • 1/4 cup red onion, finely chopped
  • 1/4 cup sweet pickle relish
  • 2 hard-boiled eggs, chopped
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook elbow macaroni according to package instructions. Drain and rinse under cold water. Set aside.
  2. In a large bowl, combine mayonnaise, sour cream, Dijon mustard, and lemon juice. Mix until smooth.
  3. Add shredded chicken, celery, bell pepper, carrots, onion, pickle relish, and eggs to the bowl.
  4. Stir in cooked macaroni and mix until everything is well coated with dressing.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 1 hour before serving for best flavor.
  7. Garnish with fresh parsley before serving.

Notes

  • Can be made a day ahead for even better flavor.
  • For a lighter version, substitute Greek yogurt for some or all of the mayonnaise.
  • Great served as a main dish for lunch or as a side for grilled meats.
