Description
Creamy Chicken Macaroni Salad is a hearty and refreshing dish made with tender pasta, shredded chicken, crisp vegetables, and a creamy dressing. Perfect as a side dish or light meal for picnics, barbecues, or potlucks.
Ingredients
- 2 cups elbow macaroni, uncooked
- 2 cups cooked chicken breast, shredded
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1/2 cup celery, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup carrots, grated
- 1/4 cup red onion, finely chopped
- 1/4 cup sweet pickle relish
- 2 hard-boiled eggs, chopped
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook elbow macaroni according to package instructions. Drain and rinse under cold water. Set aside.
- In a large bowl, combine mayonnaise, sour cream, Dijon mustard, and lemon juice. Mix until smooth.
- Add shredded chicken, celery, bell pepper, carrots, onion, pickle relish, and eggs to the bowl.
- Stir in cooked macaroni and mix until everything is well coated with dressing.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 1 hour before serving for best flavor.
- Garnish with fresh parsley before serving.
Notes
- Can be made a day ahead for even better flavor.
- For a lighter version, substitute Greek yogurt for some or all of the mayonnaise.
- Great served as a main dish for lunch or as a side for grilled meats.
