Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • 1/4 tsp salt


Instructions

  1. Preheat oven to 325°F (165°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture firmly into the bottom of a greased 9-inch springform pan.
  4. Bake the crust for 10 minutes, then remove and let cool.
  5. In a large bowl, beat cream cheese until smooth.
  6. Add sugar and beat until combined.
  7. Add eggs one at a time, mixing on low speed.
  8. Mix in sour cream, vanilla extract, flour, and salt until just combined.
  9. Pour filling over the cooled crust.
  10. Bake for 50–55 minutes until edges are set and center is slightly jiggly.
  11. Turn off oven, crack the door, and let cheesecake cool for 1 hour.
  12. Refrigerate for at least 4 hours before serving.
