Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water or hot coffee
  • 1 cup semi-sweet chocolate chips (optional for extra fudginess)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans. Line the bottoms with parchment paper.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Mix until the batter is smooth.
  4. Slowly pour in the boiling water or hot coffee while mixing. The batter will become thin—this is normal and leads to the moist texture.
  5. Fold in chocolate chips if using.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 30–35 minutes or until a toothpick inserted into the center comes out with moist crumbs.
  8. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  9. Frost or serve as desired.
