Ingredients
- 1 3/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water or hot coffee
- 1 cup semi-sweet chocolate chips (optional for extra fudginess)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans. Line the bottoms with parchment paper.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Mix until the batter is smooth.
- Slowly pour in the boiling water or hot coffee while mixing. The batter will become thin—this is normal and leads to the moist texture.
- Fold in chocolate chips if using.
- Divide the batter evenly between the prepared pans.
- Bake for 30–35 minutes or until a toothpick inserted into the center comes out with moist crumbs.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Frost or serve as desired.

- Using hot coffee enhances the chocolate flavor.
- For an even fudgier finish, add a ganache topping.
- This cake pairs well with chocolate buttercream or whipped cream frosting.
