Ingredients
- 4 boneless, skinless chicken thighs or breasts
- 2 tablespoons olive oil
- 3 tablespoons butter (divided)
- 4 cloves garlic, minced
- 1 cup long-grain white rice (uncooked)
- 2 cups chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1 teaspoon salt (divided)
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Season chicken with salt, pepper, paprika, and Italian seasoning on both sides.
- Heat olive oil and 1 tablespoon butter in a large skillet over medium heat. Add the chicken and sear for 4–5 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, melt remaining butter and add minced garlic. Sauté for 30 seconds until fragrant.
- Add uncooked rice and stir to coat it in the garlic butter for about 1 minute.
- Pour in chicken broth and bring to a simmer. Scrape any browned bits from the bottom of the pan for extra flavor.
- Reduce heat to low, cover, and cook for 15–18 minutes, until the rice is tender and liquid is absorbed.
- Stir in grated Parmesan cheese until creamy and well combined.
- Return the chicken to the pan, nestling it on top of the rice. Cover and heat for 2–3 minutes.
- Garnish with chopped parsley and serve warm.

- For extra creaminess, add 1/4 cup heavy cream when stirring in Parmesan.
- Use chicken thighs for more flavor and tenderness.
- Substitute brown rice, but increase broth to 2 1/2 cups and simmer for 30–35 minutes.
