Description

A comforting and hearty chicken and potato bake featuring tender chicken pieces, seasoned potatoes, and a creamy, savory sauce baked until golden.


Ingredients

  • 4 boneless skinless chicken breasts
  • 4 cups potatoes, peeled and diced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil


Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Season the chicken breasts with salt, pepper, paprika, and thyme.
  3. Heat olive oil in a skillet and sear the chicken for 2–3 minutes per side until lightly browned. Set aside.
  4. In the same pan, sauté onion and garlic until fragrant.
  5. Add potatoes to the skillet and cook for 5 minutes, stirring occasionally.
  6. Pour in chicken broth and heavy cream, stirring to combine. Simmer for 2 minutes.
  7. Transfer the potato mixture to the baking dish and place chicken breasts on top.
  8. Cover with foil and bake for 35 minutes.
  9. Remove foil, sprinkle cheddar cheese on top, and bake uncovered for an additional 10–15 minutes until golden and bubbly.
  10. Let rest for 5 minutes before serving.

Notes

  • For added flavor, mix in mushrooms or spinach.
  • Substitute chicken thighs for a juicier result.
  • Use half-and-half instead of cream for a lighter version.
