Description
A comforting and hearty chicken and potato bake featuring tender chicken pieces, seasoned potatoes, and a creamy, savory sauce baked until golden.
Ingredients
- 4 boneless skinless chicken breasts
- 4 cups potatoes, peeled and diced
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Season the chicken breasts with salt, pepper, paprika, and thyme.
- Heat olive oil in a skillet and sear the chicken for 2–3 minutes per side until lightly browned. Set aside.
- In the same pan, sauté onion and garlic until fragrant.
- Add potatoes to the skillet and cook for 5 minutes, stirring occasionally.
- Pour in chicken broth and heavy cream, stirring to combine. Simmer for 2 minutes.
- Transfer the potato mixture to the baking dish and place chicken breasts on top.
- Cover with foil and bake for 35 minutes.
- Remove foil, sprinkle cheddar cheese on top, and bake uncovered for an additional 10–15 minutes until golden and bubbly.
- Let rest for 5 minutes before serving.
Notes
- For added flavor, mix in mushrooms or spinach.
- Substitute chicken thighs for a juicier result.
- Use half-and-half instead of cream for a lighter version.
