Description

A hearty and comforting breakfast bowl made with savory sausage, fluffy eggs, crispy potatoes, and melted cheese, perfect for a filling morning meal or meal prep.


Ingredients

  • 1 lb (450 g) breakfast sausage
  • 4 large eggs
  • 2 cups frozen or fresh diced potatoes
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes and cook for 8–10 minutes, stirring occasionally, until golden and tender.
  3. Add sausage to the skillet, breaking it up, and cook until browned and fully cooked.
  4. Add onion and bell pepper and sauté for 2–3 minutes until softened.
  5. In a bowl, whisk eggs with milk, salt, pepper, and paprika.
  6. Reduce heat to medium-low and pour eggs into the skillet.
  7. Gently stir until eggs are just set.
  8. Sprinkle shredded cheese over the top and cover for 1–2 minutes until melted.
  9. Serve warm or divide into bowls for meal prep.
