Ingredients
- 1 lb (450 g) breakfast sausage
- 4 large eggs
- 2 cups frozen or fresh diced potatoes
- 1 cup shredded cheddar cheese
- 1 tbsp olive oil
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/4 cup milk
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced potatoes and cook for 8–10 minutes, stirring occasionally, until golden and tender.
- Add sausage to the skillet, breaking it up, and cook until browned and fully cooked.
- Add onion and bell pepper and sauté for 2–3 minutes until softened.
- In a bowl, whisk eggs with milk, salt, pepper, and paprika.
- Reduce heat to medium-low and pour eggs into the skillet.
- Gently stir until eggs are just set.
- Sprinkle shredded cheese over the top and cover for 1–2 minutes until melted.
- Serve warm or divide into bowls for meal prep.

- Use turkey sausage for a lighter option.
- Store in the refrigerator for up to 3 days.
