A rich and creamy one-skillet pasta dish made with tender chicken, garlic, and a cheesy Parmesan sauce—perfect for a quick and comforting weeknight dinner.
Ingredients
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 cups uncooked pasta (penne or rotini)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chicken pieces, season with salt and pepper, and cook for 5–7 minutes until golden and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Add uncooked pasta and chicken broth. Bring to a boil, then reduce heat and simmer for 10–12 minutes, stirring occasionally, until pasta is tender.
- Stir in heavy cream, Parmesan cheese, mozzarella cheese, Italian seasoning, and red pepper flakes if using.
- Return the cooked chicken to the skillet and stir until everything is well combined and the sauce is creamy.
- Simmer for 2–3 minutes until thickened.
- Garnish with chopped parsley and serve hot.
Notes
- Use freshly grated Parmesan for the best flavor and texture.
- You can substitute half-and-half for a lighter sauce.
- Add spinach or mushrooms for extra vegetables.
