Description

A rich and creamy one-skillet pasta dish made with tender chicken, garlic, and a cheesy Parmesan sauce—perfect for a quick and comforting weeknight dinner.


Ingredients

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups uncooked pasta (penne or rotini)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chicken pieces, season with salt and pepper, and cook for 5–7 minutes until golden and cooked through. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add uncooked pasta and chicken broth. Bring to a boil, then reduce heat and simmer for 10–12 minutes, stirring occasionally, until pasta is tender.
  5. Stir in heavy cream, Parmesan cheese, mozzarella cheese, Italian seasoning, and red pepper flakes if using.
  6. Return the cooked chicken to the skillet and stir until everything is well combined and the sauce is creamy.
  7. Simmer for 2–3 minutes until thickened.
  8. Garnish with chopped parsley and serve hot.

Notes

  • Use freshly grated Parmesan for the best flavor and texture.
  • You can substitute half-and-half for a lighter sauce.
