Ingredients
- 1 pound large strawberries
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup heavy whipping cream
- 2 tablespoons graham cracker crumbs
- Optional: mini chocolate chips for garnish
Instructions
- Wash strawberries, remove stems, and slice each strawberry in half lengthwise.
- Using a small spoon or melon baller, gently hollow out the center of each strawberry half.
- In a mixing bowl, beat cream cheese until smooth.
- Add powdered sugar and vanilla extract and mix until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Spoon or pipe the cheesecake filling into the hollowed strawberries.
- Sprinkle with graham cracker crumbs and optional chocolate chips.
- Chill for 20 minutes before serving if desired.
