Ingredients

  • 1 pound large strawberries
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup heavy whipping cream
  • 2 tablespoons graham cracker crumbs
  • Optional: mini chocolate chips for garnish

Instructions

  1. Wash strawberries, remove stems, and slice each strawberry in half lengthwise.
  2. Using a small spoon or melon baller, gently hollow out the center of each strawberry half.
  3. In a mixing bowl, beat cream cheese until smooth.
  4. Add powdered sugar and vanilla extract and mix until well combined.
  5. In a separate bowl, whip the heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture.
  7. Spoon or pipe the cheesecake filling into the hollowed strawberries.
  8. Sprinkle with graham cracker crumbs and optional chocolate chips.
  9. Chill for 20 minutes before serving if desired.
