Description

Cheesecake Brownie Bites are rich, bite-sized desserts featuring a fudgy brownie base topped with a smooth and creamy cheesecake layer, perfect for parties and easy portion control.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup granulated sugar (for cheesecake layer)
  • 1 large egg (for cheesecake layer)
  • 1/2 tsp vanilla extract (for cheesecake layer)


Instructions

  1. Preheat oven to 350°F (175°C) and line a mini muffin pan with paper liners.
  2. In a bowl, whisk melted butter and sugar until combined.
  3. Add eggs and vanilla extract, mixing until smooth.
  4. Stir in cocoa powder, flour, and salt just until combined.
  5. In a separate bowl, beat cream cheese and sugar until smooth.
  6. Add egg and vanilla extract to the cream cheese mixture and mix until creamy.
  7. Spoon brownie batter into liners, filling about 2/3 full.
  8. Add a small spoonful of cheesecake mixture on top of each.
  9. Swirl gently with a toothpick.
  10. Bake for 18–22 minutes until set.
  11. Cool completely, then refrigerate for at least 1 hour before serving.

Notes

  • Do not overbake to keep brownies fudgy.
  • Use room-temperature cream cheese for a smooth topping.
  • Store refrigerated for up to 4 days.
