Cheesecake Brownie Bites are rich, bite-sized desserts featuring a fudgy brownie base topped with a smooth and creamy cheesecake layer, perfect for parties and easy portion control.
Ingredients
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 8 oz (225 g) cream cheese, softened
- 1/4 cup granulated sugar (for cheesecake layer)
- 1 large egg (for cheesecake layer)
- 1/2 tsp vanilla extract (for cheesecake layer)
Instructions
- Preheat oven to 350°F (175°C) and line a mini muffin pan with paper liners.
- In a bowl, whisk melted butter and sugar until combined.
- Add eggs and vanilla extract, mixing until smooth.
- Stir in cocoa powder, flour, and salt just until combined.
- In a separate bowl, beat cream cheese and sugar until smooth.
- Add egg and vanilla extract to the cream cheese mixture and mix until creamy.
- Spoon brownie batter into liners, filling about 2/3 full.
- Add a small spoonful of cheesecake mixture on top of each.
- Swirl gently with a toothpick.
- Bake for 18–22 minutes until set.
- Cool completely, then refrigerate for at least 1 hour before serving.
Notes
- Do not overbake to keep brownies fudgy.
- Use room-temperature cream cheese for a smooth topping.
- Store refrigerated for up to 4 days.
- Can be frozen for longer storage.
