Description

A hearty and comforting soup that combines all the classic flavors of a cheeseburger with tender macaroni in a rich, cheesy broth—perfect for a cozy family meal.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups milk
  • 1 cup elbow macaroni (dry)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 2 cups shredded cheddar cheese
  • 2 tablespoons all-purpose flour


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Add diced onion and cook for 3–4 minutes until softened.
  4. Stir in garlic and cook for 30 seconds until fragrant.
  5. Sprinkle flour over the mixture and stir well to coat.
  6. Gradually add beef broth, stirring constantly to avoid lumps.
  7. Add milk, diced tomatoes, salt, pepper, paprika, and parsley. Bring to a gentle simmer.
  8. Add elbow macaroni and cook for 8–10 minutes, stirring occasionally, until pasta is tender.
  9. Reduce heat to low and stir in shredded cheddar cheese until melted and smooth.
  10. Taste and adjust seasoning as needed. Serve hot.

Notes

  • For extra cheesiness, add an additional 1/2 cup of cheddar.
  • Ground turkey can be substituted for beef.
  • Stir frequently after adding pasta to prevent sticking.
