Description

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon instant espresso powder
  • 1 cup strong brewed coffee, cooled
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • For the Caramel Frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup thick caramel sauce
  • 2 tablespoons heavy cream
  • For Garnish:
  • 1/4 cup caramel sauce for drizzle


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Dissolve espresso powder in the brewed coffee and set aside.
  4. In a large bowl, beat butter and sugar until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  6. Alternate adding dry ingredients and buttermilk to the batter, beginning and ending with dry ingredients. Mix in the coffee mixture until just combined.
  7. Divide batter evenly among prepared pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
  9. For the frosting, beat butter until creamy. Gradually add powdered sugar, caramel sauce, and heavy cream. Beat until smooth and fluffy.
  10. Assemble cake by layering cake and caramel frosting. Frost the top and sides, then drizzle with additional caramel sauce.
