Ingredients
- 12 oz (340g) fettuccine pasta
- 1 lb (450g) boneless, skinless chicken breasts
- 2 tbsp Cajun seasoning (divided)
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 1/2 cups (360ml) heavy cream
- 1/2 cup (120ml) chicken broth
- 1 cup (100g) grated Parmesan cheese
- 2 cups (200g) broccoli florets
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp chopped parsley (for garnish)
Instructions
- Cook fettuccine in salted boiling water according to package directions until al dente. During the last 3 minutes of cooking, add broccoli florets to the boiling pasta water. Drain and set aside.
- Season chicken breasts with 1 tablespoon of Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken 5–6 minutes per side until golden brown and cooked through. Remove from skillet and let rest, then slice into strips.
- In the same skillet, melt butter. Add minced garlic and sauté for 1 minute until fragrant.
- Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
- Whisk in Parmesan cheese and remaining Cajun seasoning until smooth and creamy.
- Add cooked pasta, broccoli, and sliced chicken to the skillet. Toss everything together until well coated in the sauce.
- Simmer for 2–3 minutes, adding a splash of pasta water if needed for desired consistency.
- Garnish with parsley and optional red pepper flakes. Serve hot with extra Parmesan on top.
