Description

Cajun Chicken Alfredo with Broccoli is a creamy, spicy twist on a classic pasta dish. Juicy Cajun-seasoned chicken, tender broccoli florets, and fettuccine noodles are tossed together in a rich, cheesy Alfredo sauce for the ultimate comfort meal with a flavorful kick.

Ingredients

  • 12 oz (340g) fettuccine pasta
  • 1 lb (450g) boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning (divided)
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 1/2 cups (360ml) heavy cream
  • 1/2 cup (120ml) chicken broth
  • 1 cup (100g) grated Parmesan cheese
  • 2 cups (200g) broccoli florets
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp chopped parsley (for garnish)

Instructions

  1. Cook fettuccine in salted boiling water according to package directions until al dente. During the last 3 minutes of cooking, add broccoli florets to the boiling pasta water. Drain and set aside.
  2. Season chicken breasts with 1 tablespoon of Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Cook chicken 5–6 minutes per side until golden brown and cooked through. Remove from skillet and let rest, then slice into strips.
  4. In the same skillet, melt butter. Add minced garlic and sauté for 1 minute until fragrant.
  5. Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  6. Whisk in Parmesan cheese and remaining Cajun seasoning until smooth and creamy.
  7. Add cooked pasta, broccoli, and sliced chicken to the skillet. Toss everything together until well coated in the sauce.
  8. Simmer for 2–3 minutes, adding a splash of pasta water if needed for desired consistency.
  9. Garnish with parsley and optional red pepper flakes. Serve hot with extra Parmesan on top.

Notes

  • Use blackened Cajun seasoning for a bolder flavor.
  • Substitute half-and-half for a lighter sauce.
  • To save time, use precooked rotisserie chicken.
  • Add mushrooms or bell peppers for extra texture and flavor.
