Ingredients
- 1 pound boneless skinless chicken breast, diced
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 2 cups milk
- 2 cups fresh broccoli florets
- 1 cup shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt (for dumplings)
- 1/2 cup milk (for dumplings)
- 2 tablespoons melted butter
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken and cook until lightly browned.
- Add onion and garlic and sauté until softened.
- Pour in chicken broth and milk, then bring to a gentle simmer.
- Stir in broccoli, salt, pepper, and paprika. Simmer for 10 minutes.
- Add shredded cheddar cheese and stir until melted and smooth.
- In a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter to form a dough.
- Drop spoonfuls of dumpling dough onto the simmering soup.
- Cover and cook for 15 minutes without lifting the lid.
- Check dumplings for doneness and adjust seasoning if needed.
- Serve hot.

- Do not stir once dumplings are added.
- You can use rotisserie chicken to save time.
