Ingredients

  • 1 pound boneless skinless chicken breast, diced
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups milk
  • 2 cups fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt (for dumplings)
  • 1/2 cup milk (for dumplings)
  • 2 tablespoons melted butter


Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and cook until lightly browned.
  2. Add onion and garlic and sauté until softened.
  3. Pour in chicken broth and milk, then bring to a gentle simmer.
  4. Stir in broccoli, salt, pepper, and paprika. Simmer for 10 minutes.
  5. Add shredded cheddar cheese and stir until melted and smooth.
  6. In a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter to form a dough.
  7. Drop spoonfuls of dumpling dough onto the simmering soup.
  8. Cover and cook for 15 minutes without lifting the lid.
  9. Check dumplings for doneness and adjust seasoning if needed.
  10. Serve hot.

Notes

  • Do not stir once dumplings are added.
